As part of the SNSF ‘True Cost of Food-CH ’ project, EPFL's Laboratory of Environmental and Urban Economics (LEUrE) aims to measure the hidden costs of food, i.e. the monetary value of the environmental, social and health impacts of activities linked to the agri-food system.


The aim of this approach is to develop political and economic instruments based on these hidden costs, to encourage the transition towards healthier, more sustainable, and more accessible food.

An initial study, carried out in partnership with the EPFL's catering unit (RESCO) and its partners, aims to test several research hypotheses and policy instruments applied to coffee, at several levels of the value chain, i.e. from producer to consumer.

In this context, from 26 February to 7 March 2025 at the Rolex Learning Center, we will be revealing the behind-the-scenes aspects of the coffee industry, its hidden costs and its impact from cherry to cup. During this period, we will be proposing coffee pricing that takes account of these hidden costs. LEUrE, RESCO and their partners will be on hand to answer your questions from 11.30am to 1pm (Monday to Friday). The results of this study will be reported in spring 2025.
